This makes about 2/3 cup of sauce.  If you want an ultra-cheesy sauce, you can add an additional 1 ounce of shredded cheese and that will get you there and will be about 1 cup of sauce.  Or if you just want more than 2/3 cup of sauce - you can follow the actual linked recipe - which makes 1 cup (with less cheese).


The 2/3 cup was more than plenty for 2 people - you’ll find several ways to use it ... so if you have some leftover ... save it!  And of course, whenever I say “save something” you know that’s my code ... for you’ll see more recipes using this basic/master recipe! It will keep in the refrigerator and it might just come in handy one night when you’re piecing together leftovers - or you need a quick after school snack of nachos!  Update - Check out Cheesy Baked Egg Noodles For One (or Two) here which uses this recipe!


The recipe I used is from the Argo Corn Starch Website and is linked HERE.  All I did was halve the recipe ... and well, I added an extra 1 ounce of cheese to the halved recipe - which gets it close to 2/3 cup of sauce.  I’m demonstrating the microwave method here (because it’s just hot here in Florida) ... but if you want the stovetop method - they share it on the linked recipe.


Here the Ingredients I used:


  1. - 1/2 cup cold milk

  2. - 1/2 Tablespoon Corn Starch

  3. - 1 Tablespoon unsalted butter

  4. - 1/8 teaspoon kosher salt

  5. - pinch black pepper  (I like to use Cayenne pepper too)

  6. - 3 ounces shredded cheese of choice  (I used Colby Jack)

  7. - Optional:  Any additional seasonings you like!!  Dry mustard, garlic powder,   onion powder, chicken bouillon granules, hot sauce, you get the idea ...


Directions:


Pour milk into a microwave-safe measuring cup.  Add in corn starch and stir/whisk until the corn starch is smooth.  Add butter, salt, pepper and any other seasonings you like.


Microwave on 100% / HIGH power for 1 minute, check it at 30 seconds to see if it needs stirring.  Mine didn’t, but I checked it to know for sure.  Microwave for 1 additional minute, until thick and bubbly.  If it’s not thick and bubbly, microwave it in 20 second increments, checking and stirring to know for sure.


Stir in the cheese until smooth!  Serve over broccoli, cauliflower, asparagus or baked potatoes!  Or pasta as in Cheesy Baked Egg Noodles For One (or Two) Or of course, dip your Fritos Scoops corn chips in it and relax a while!
